If you cook or eat chicken a lot and are bored of the same old recipes, this is a very easy way to bring a new twist to a simple recipe. Just sautee chicken breasts the way you nornally would, then add greek veggies on top and voila ! Or should I say Opa !

What you will need:

4-6 halved chicken breasts

2 tablespoons canola or grape seed oil

salt & pepper

Kalamata olives, diced

Feta cheese

Grape or cherry tomatoes, diced

Good quality olive oil

cucumber – optional

If possible, season the chicken at least 30-60 minutes before cooking and let sit in refrigerator. Warm canola oil in pan on medium heat, then sautee chicken about 3-5 minutes per side. Once done, remove from heat and let sit.

In a bowl, combine tomatoes, feta, and olives with 2-3 tablespoons of olive oil and mix. Then simply place a few spoonfools on each chicken breast and serve with your favorite side !

* It’s best to use a light oil light canola or grape seed as they fare better with high temperature cooking. Olive oil burns at high temperatures so I use it mostly for salads, and marinating.
