I had previously blogged about an easy frittata recipe that I like to make on weekends because it’s something you can make in advance then grab for breakfast or lunch. It’s also great if you are having guests over for brunch. This weekend I made it again as well as a very simple recipe for roasted potatoes from Ina Garten’s cookbook. I feel like this isn’t even a recipe post as it’s so easy to make this dish. It’s more of a reminder to buy fingerling potatoes next time you are at the market so you can make a batch of these and eat on the side with your frittata or whatever else you may be having.
Pre-heat oven to 375 degrees
Cut the potatoes in half. In a large bowl, coat the potatoes lightly with good quality olive oil and mix so all potatoes are evenly coated. Sprinkle with salt & pepper. Place on a greased or foil lined baking pan and roast for 35 minutes. That’s it.
