If you have followed any of my previous posts of recipes, you may have noticed that I prefer recipes with a few basic ingredients that can be found in your pantry, and recipes that require little hands on time. Whether it’s mid-week cooking for my family or entertaining guests, I don’t want to be stuck in the kitchen for 30-40 minutes. The great thing about baked or roasted recipes, is that you pop them in and let them cook while you clean up, enjoy a glass of wine or join your guests. This super easy and delicious chicken recipe is always a hit and is a fun alternative to the same chicken recipes you may have on repeat.
Here is what you will need:
– French Fried Onions (one canister)
– 1.5 – 2lbs of boneless, skinless, chicken breast
– One egg, lightly beaten
– Cooking sheet lined with aluminum foil and sprayed lightly with no stick cooking spray.
Pre-heat oven to 375 degrees. Half all the chicken so you have a thinner or flatter chicken breast to work with. Add a dash of salt to each side. The fried onions will add a lot of flavor so don’t over season. Dunk each breast in the egg, then coat with french fried onions that you have laid out on a plate. I use my hands to really crunch the onion to the chicken so both sides are completely coated. Place on cooking sheet and then place in oven for 25-27 minutes and pour yourself a glass of wine ! The chicken will come out super juicy and moist from the fried onion and the outside of it will be crunchy and golden. So delicious and sure to please. I served mine with some roasted asparagus and my yummy lentil salad (will share lentil recipe in a few days)
